Problem. The EUR doesn't update on Sunday evenings when it opens and then seems to fix itself 5-6 hours after opening.

The problem is the market hours you use. The EUR symbol need to show TWO sessions of hours.
I suspect you have one session in Ensign will treat the market as closed on Sunday for the 1st session hours and open on Sunday for the 2nd session hours. So the 5-6 hours you had the problem is the evening part of Sunday when 1st session was closed.

Solution is the click menu Setup | Symbol Properties and for the EUR Future entry use the following hours as shown in this image. Then you will not have the problem next Sunday evening.
